Flavorful Kombucha Recipe

You will need:

  • black tea bags8 bags of black tea
  • unpasteurized kombucha2 cups of unpasteurized, unflavored store-bought kombucha
  • SCOBY1 SCOBY per jar
  • 1-gallon glass jar1-gallon glass jar
  • tight-weave clothTight-weave cloth or coffee filters
  • rubberbandsRubberbands

Instructions

  1. Start by boiling the gallon of filtered water.
  2. Add the cup of white sugar to the boiling water and stir until the sugar is completely dissolved.
  3. Turn off the heat and add the 8 bags of black tea. Let them steep until the water has completely cooled.
  4. Once the water is cooled, remove the tea bags.
  5. Add the 2 cups of unpasteurized, unflavored store-bought kombucha into the jar.
  6. Gently add the SCOBY to the jar.
  7. Pour the sweet tea into the jar, leaving about an inch of space at the top.
  8. Cover the jar with a tight-weave cloth or coffee filters and secure with a rubber band.
  9. Allow the mixture to sit undisturbed at room temperature, out of direct sunlight, for 7 to 30 days, depending on your taste preferences.
  10. After fermentation, remove the SCOBY and store it for the next batch. The now fermented tea, or Kombucha, is ready to be flavored and bottled or enjoyed plain.

Notes

The longer the kombucha ferments, the less sweet and more vinegary it will taste. Always use clean, non-metallic utensils when handling the SCOBY. Metal can damage the SCOBY.
